In 1989 we bought the DOMAINE DE CANTEPERDRIX. In 1991, after thorough improvements of the soils and sowing of the plots which had lain fallow for years, we planted 2,5 hectares of Viognier, a white vine variety already known in ancient times in the area of the Adriatic sea. In the following years, we planted successively Cabernet Sauvignon, Merlot, Roussanne, Petit Verdot and Lledoner Pelut.
Of 34 hectares (85 acres) overall only 14 ha (35 acres) are vineyards. The rest consists mainly of forest, olive groves, fig trees and well-maintained fallow soils which are mowed and aerated every year. |
"Canteperdrix" is located at about 30 km from the sea. Its gentle slopes facing due south profit from the numerous sunny days and the temperate summer nights, which guarantees a complete, homogeneous ripening of the grapes. These climatic conditions are a requisite for the producing of a completely natural wine without any complex additional manipulations.
We strictly respect the norms of biological winegrowing. From the very beginning we opted for an ecological culture without use of chemical products. The plants are fastened on galvanized wire and pruned very short (Guyot method). Therefore, the annual yield is rather moderate: according to the vine varieties between 25 and 40 hectolitres per hectare.
It turned out quickly that the old cellar we had bought from the former owner was inadequate. In 1999, we had a new building constructed, which respects the environment and the landscape and whose ground-cooled air guarantees an ideal temperature.
As for the equipment (pneumatic wine press, stemmer, filters, stainless steel tanks, bottling machine), we wanted it qualified for optimal and clean work.
We create the labels ourselves.
